We went a little hog wild this summer and purchased four pigs! These hogs had a really lovely summer, raised on pasture right behind our home at Wickens Ranch. They were able to express their natural behaviors, rooting for bugs and plant nutrition while also being fed each day by our kids. We nourished them with the same Montana crops - barley and peas - that we use to finish our cattle. The pork is a bit darker in color (compared to conventional pork) and incredibly flavorful.

Spare ribs are cut from the bottom of the rib cage and sometimes include brisket. Our ribs are so easy to make and tender when wrapped and cooked low and slow.
