While to me Eric Wickens still remains “the man,the myth, the legend”, the Wizard of Beef, if you will, because our busy schedules and the distance between Bozeman and the ranch have made meeting in person difficult. But I have loved creating delicious menus with his beautiful beef for a few years now. My first encounter with Wickens was at the local farmers market, where their friendly and knowledgeable right-hand-woman to their beef business, Danielle, sold me my first Wickens Flat Iron steak. As a Chef who is mindful of cost and conscious of sustainability, I am always searching for the lesser known cuts to create with. When using Wickens Ranch beef, I base my menus around unique and delicious preparations of lesser known but flavor-packed cuts to save cost and wow my guests. I remain loyal to simply good products when I see them, and I love this beef. My favorite cuts are the Picanha Steak, the Bavette, and the Flat Iron.

We deliver to the Bozeman and Belgrade areas 5 days a week, and most orders arrive next day. For large, bulk orders, we are happy to coordinate a pick up at our freezer space in Bozeman.
