The marrow is the spongy tissue in the center of bones, and has a rich, slightly sweet flavor with a smooth texture. Place your marrow bones under a hot broiler and serve alongside toast, or use as a base for a rich stew!  

Our marrow bones are pipe cut, not sliced in half.
